Rustic Plum Cobbler: A Homely Movie Night Treat
Ingredients:
For the Dough:
- 1/2 cup (70g) all-purpose flour
- 60g cold butter, cubed
- 1/2 teaspoon baking powder
- 2 tablespoons (15g) almond flour
- 1.5 tablespoons powdered sugar
- A pinch of salt
- 1-2 tablespoons heavy cream
For the Fruits:
- 5 plums, pitted and quartered or cut into eighths
- A handful of fresh or frozen blueberries
- 3 tablespoons (30g) vanilla sugar
- Juice and zest from half a medium lemon
- 1 heaped tablespoon cornstarch
For the Bottom of the Pan:
- 20g butter, cubed
For the Topping:
- 2 tablespoons light brown sugar
For Serving:
- Vanilla ice cream or whipped cream
Instructions:
- Toss the plums with cornstarch, vanilla sugar, lemon juice, and zest in a bowl. Set aside.
- Preheat the oven to 180 degrees Celsius (356 degrees Fahrenheit).
- Place 20g of butter cubes at the bottom of a heatproof dish.
- Prepare the dough by hand or with a food processor by mixing flour, baking powder, almond flour, powdered sugar, salt, and butter until crumbly. Add enough cream to form a dough.
- Roll out the dough to about 3-4 mm thick, then use a cookie cutter to cut out 6-7 dough circles.
- Transfer the fruit directly to the baking dish over the butter.
- Place the dough circles over the fruit, partially covering them. Sprinkle with light brown sugar.
- Bake for about 25-30 minutes until the fruits bubble and the dough turns golden brown.
- Serve warm with ice cream or whipped cream on the side.
