Rustic Plum Cobbler: A Homely Movie Night Treat

Ingredients:

For the Dough:

  • 1/2 cup (70g) all-purpose flour
  • 60g cold butter, cubed
  • 1/2 teaspoon baking powder
  • 2 tablespoons (15g) almond flour
  • 1.5 tablespoons powdered sugar
  • A pinch of salt
  • 1-2 tablespoons heavy cream

For the Fruits:

  • 5 plums, pitted and quartered or cut into eighths
  • A handful of fresh or frozen blueberries
  • 3 tablespoons (30g) vanilla sugar
  • Juice and zest from half a medium lemon
  • 1 heaped tablespoon cornstarch

For the Bottom of the Pan:

  • 20g butter, cubed

For the Topping:

  • 2 tablespoons light brown sugar

For Serving:

  • Vanilla ice cream or whipped cream

Instructions:

  1. Toss the plums with cornstarch, vanilla sugar, lemon juice, and zest in a bowl. Set aside.
  2. Preheat the oven to 180 degrees Celsius (356 degrees Fahrenheit).
  3. Place 20g of butter cubes at the bottom of a heatproof dish.
  4. Prepare the dough by hand or with a food processor by mixing flour, baking powder, almond flour, powdered sugar, salt, and butter until crumbly. Add enough cream to form a dough.
  5. Roll out the dough to about 3-4 mm thick, then use a cookie cutter to cut out 6-7 dough circles.
  6. Transfer the fruit directly to the baking dish over the butter.
  7. Place the dough circles over the fruit, partially covering them. Sprinkle with light brown sugar.
  8. Bake for about 25-30 minutes until the fruits bubble and the dough turns golden brown.
  9. Serve warm with ice cream or whipped cream on the side.
