Ingredients: For a regular 20cm round pan (height 7cm):
- 3 large eggs
- 1/2 cup (100g) sugar
- 1 packet vanilla sugar (10g)
- 1 container heavy cream 32% or 38% (250ml)
- 400g cream cheese 25%-30% *Recommended to remove from the fridge an hour before preparation
- 2 tablespoons all-purpose flour or cornstarch
Instructions:
- Preheat the oven to 200°C.
- Whisk eggs with sugar and vanilla sugar. Add cream and cream cheese, mixing well. Finally, incorporate the flour to get a smooth mixture.
- Grease a 20cm round pan (if it's a springform, line with baking paper to prevent leakage). Pour the mixture into the pan and bake for 45-50 minutes. The top should be browned, and the center slightly wobbly (place on the second lowest rack and use both top and bottom heat).
- After baking, turn off the oven and open the door slightly. Leave the cake inside for about 5 minutes (it will deflate a bit, and that's okay). Then, remove and let it cool on the countertop. Once cooled, wrap and refrigerate for at least 4-5 hours before serving.
