Apple Cake: A Slice of Comfort This Apple Cake is the perfect treat to whip up when you're craving something homemade and comforting. It's soft, moist, and packed with the delightful flavors of fresh apples and cinnamon.

Preparation Time: 10 minutes Baking Time: 35-40 minutes

Ingredients: For two English cake pans:

  • 4 eggs
  • 3/4 cup (150g) oil
  • 1 cup (200g) sugar
  • 2 cups (280g) flour
  • 1 packet (10g) baking powder
  • 1 heaping tablespoon (8g) cinnamon powder
  • 3 medium-small apples, peeled and chopped into small cubes or grated.
  • 1/2 cup (120ml) sweet red wine/ water
  • 1/3 cup (35g) chopped walnuts

*For decoration: 1 tablespoon sugar + 1 teaspoon cinnamon

Instructions:

  1. Preheat your oven to 180°C.
  2. Using a mixer with a whisk attachment, whip the eggs with the sugar for about a minute and a half on high speed until the mixture is fluffy.
  3. Add oil, wine, and grated apples and mix (I used a Bosch Mum5 mixer with a food processor attachment and grating disc, so the grated apple falls directly into the bowl without any extra mess).
  4. In a separate bowl, mix flour, baking powder, cinnamon, and chopped walnuts. Add this to the mixer bowl and mix until just combined (overmixing can make the texture dense).
  5. Pour the mixture into two greased English cake pans, place in the preheated oven, and bake for 35-40 minutes until a toothpick comes out clean.
