But here's our little secret: it's incredibly simple to make, yet it creates a spectacle that leaves everyone spellbound. Ingredients: For the crust:

  • 2 cups or 300g all-purpose flour
  • 1/4 tsp fine salt
  • 100g or 1 packet powdered sugar
  • 200g cold butter
  • 1 large egg

For the filling:

  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup or 50g white sugar
  • 250g dark chocolate
  • 150g butter
  • 1/4 tsp fine salt

For the chocolate sauce:

  • 1/2 cup or 120ml 38% sweet cream
  • A pinch of fine salt
  • 120g dark chocolate

Instructions:

  1. Crust: In a food processor, pulse flour, salt, powdered sugar, and butter cubes until crumbly. Add beaten egg and pulse until a dough forms. Flatten, wrap, and chill for 2 hours.
  2. Roll dough on a floured surface, transfer to a 26 cm tart pan, dock with a fork, and freeze for 10 minutes.
  3. Preheat the oven to 180°C (356°F).
  4. Bake the crust straight from the freezer for 15 minutes until golden. Cool slightly.
  5. Filling: Keep the oven at 180°C (356°F). Whip eggs, yolks, and sugar for 5-7 minutes until fluffy. Melt chocolate, butter, and salt together. Fold chocolate into the egg foam, pour into the crust, and bake for 20-25 minutes until set but soft. Cool.
  6. Sauce: Heat cream and salt to near-boiling, pour over chocolate, and stir until melted.
  7. Slice the pie, serve with warm chocolate sauce, and watch as each slice disappears, leaving behind smiles and a touch of kitchen magic! 🍫✨
