For one English cake pan:
Ingredients:
- 2 eggs
- 1/2 cup (100g) sugar
- 1/3 cup (66g) Coocking oil
- 1/2 cup (120ml) orange juice (from a bottle, for a light drink)
- 1 cup (140g) self-raising flour (or 1 cup regular flour mixed with 1 tsp baking powder)
- 1/2 tsp (2.5g) cinnamon powder
- 1/4 cup (22g) ground coconut
For topping:
- 1/4 tsp cinnamon powder + 1/2 tsp sugar
Instructions:
- Preheat your oven to 180°C (356°F) and grease your English cake pan.
- Mix all the ingredients in the order listed (using a whisk or spoon) until you get a uniform batter.
- Pour the batter into the greased pan. Mix 1/4 tsp cinnamon powder with 1/2 tsp sugar and sprinkle it over the batter.
- Bake for about 30 minutes, until a skewer comes out dry.
