Preparation Details:

Preparation time: 10 minutes

Baking/Cooking time: 30 minutes

Ingredients: For an English cake pan

  • 2 eggs
  • 1/2 cup (100g) sugar
  • 1/3 cup (80ml) canola oil
  • 1/3 cup (80ml) orange juice
  • 1/2 cup (120g) all-purpose flour
  • 1/2 cup (50g) fine oatmeal
  • 2 tablespoons (20g) cocoa powder
  • 1 teaspoon (5g) baking powder
  • 1/4 teaspoon baking soda

For the topping: 50g dark chocolate + 1 tablespoon water + 1 tablespoon oil

Baking Instructions:

  1. Preheat and Prepare:

    • Preheat your oven to 180°C (356°F).
  2. Mix the Wet Ingredients:

    • In a mixing bowl, use a hand mixer or a whisk to beat the eggs with the sugar. Add the oil and orange juice and mix well.
  3. Combine the Dry Ingredients:

    • In a separate bowl, combine the flour, fine oatmeal, cocoa powder, baking powder, and baking soda. Gradually add this to the wet ingredients, mixing until you have a smooth batter (be careful not to overmix to preserve the cake's tender texture).
  4. Bake the Cake:

    • Pour the batter into a greased English cake pan and bake for about 30 minutes, or until a toothpick inserted comes out clean.
  5. Prepare and Add the Topping:

    • Prepare the topping: Melt 50g of dark chocolate with a tablespoon of water and a tablespoon of oil in the microwave. Stir until smooth and pour over the cake once it's out of the oven.
