Preparation Time: 10 minutes Cooking Time: 40 minutes

Ingredients: For a 20cm diameter pan:

  • 2 cups (280g) all-purpose flour
  • 2 teaspoons (10g) baking powder
  • 1 packet (10g) vanilla sugar (or substitute with 1 teaspoon vanilla extract + 1 flat tablespoon sugar)
  • 2 tablespoons (25g) sugar
  • 2 eggs
  • 3 tablespoons oil
  • 2 cups (240ml) milk (Tip: For fluffier, thicker pancakes, consider mixing 1 cup buttermilk or yogurt with 1 cup milk)
  • *Your favorite chocolate spread

Instructions:

  1. Mix all ingredients thoroughly in a bowl with a whisk until smooth (follow the listed order).
  2. Oil a 20cm diameter non-stick pan. When hot, pour a quarter of the batter into the pan. Cover and cook over medium-low heat for 4-5 minutes until small bubbles form on the top and the bottom is set. Using a spatula, flip the pancake, cover, and cook for another 4-5 minutes. Transfer to a plate.
  3. Repeat the process to make 3 more pancakes (remember to oil the pan each time).

Assembling the Cake:

  1. Place a pancake on a flat plate and spread chocolate spread on it. Place another pancake on top and spread chocolate on it too. Continue this process until you have a 4-layered pancake cake with chocolate in between each layer. Spread chocolate on the top layer and sprinkle some colorful sprinkles (optional).

Tips and Notes: The cake is best enjoyed on the same day. After a day in the fridge, the taste and texture may change.

So, grab your apron, whisk away, and let's create some pancake magic that's sure to bring smiles and a touch of sweetness to your day! Happy pancaking! 🥞🎉
