Ingredients:

  • 500g of bread flour or all-purpose flour
  • 1 and 1/3 tablespoons of dry yeast (13g)
  • 1 teaspoon of sugar
  • 1 and 1/4 cups of warm water (300ml)
  • 3 tablespoons of olive oil (45ml)
  • 1 teaspoon of salt
  • To sprinkle on top: Extra olive oil and coarse salt

Choose Your Adventure - Focaccia Toppings (Optional):

  • Sliced red onions, thinly sliced mushrooms
  • Black or green olives
  • Halved cherry tomatoes, sun-dried tomatoes, diced ham
  • Crushed garlic
  • Feta cheese cubes, shredded cheddar/mozzarella, shredded Parmesan, sliced mozzarella balls (Tip: Add cheddar or shredded mozzarella in the last 10 minutes of baking to prevent them from burning).
  • Fresh or dried leaves of thyme, rosemary, basil, za'atar, oregano

Preparation Steps:

  1. Mixing the Dough:

    • In a mixer bowl fitted with a dough hook (using a Bosch Mum5 helps to directly measure ingredients in the bowl), mix together flour, yeast, and sugar.
    • Slowly add the warm water and blend for about 2 minutes on medium speed.
    • Incorporate the olive oil and knead for 5 minutes. Sprinkle the salt evenly and continue kneading for another 3 minutes until you get a smooth and pliable dough.
    • Apply a thin coat of oil to the bowl, place the dough back in, and cover with a towel. Allow it to rise in a warm spot for about 60 minutes.
  2. Forming and Second Proofing:

    • Split the dough into 4 equal portions. Roll each into an elliptical shape approximately 9x30cm.
    • Prepare a large baking sheet with parchment paper, lightly oil the paper, and arrange the dough pieces. Cover with a towel and let them puff up for an additional 15 minutes.
  3. Preheating and Adding Toppings:

    • Preheat your oven to 200°C (390°F) (adjust to 190°C for more potent ovens).
    • Use your fingertips to create small wells in the dough (avoid making holes). Drizzle around 1.5 tablespoons of olive oil over each piece and scatter a pinch of coarse salt. Layer with the toppings of your choice.
  4. Baking and Final Touches:

    • Bake for 20-22 minutes or until golden (make sure your oven is preheated well!).
    • After taking the Focaccia out and while it's still warm, lavish each piece with an additional tablespoon of olive oil.

Creative Topping Combinations:

  • Savory Olive & Parmesan Focaccia: Combine green olives, a sprinkle of Parmesan cheese, and fresh thyme leaves.
  • Garlicky Cheese Focaccia: Spread with garlic, cover with mozzarella and Parmesan cheese, and garnish with thyme leaves.
  • Fresh Tomato & Mozzarella Focaccia: Arrange cherry tomatoes and mozzarella slices, then dust with dried basil.
