  • ¼ cup (60ml) lemonade (mix half a squeezed lemon with water)
  • 1 cup (140g) all-purpose flour
  • 1 teaspoon (5g) baking powder
  • ¼ teaspoon baking soda

Preparation:

  1. Preheat your oven to 347 degrees Fahrenheit (175 degrees Celsius) and grease an English cake pan.
  2. In a small bowl, mix the flour with baking powder and baking soda.
  3. In a separate bowl, whisk the eggs with sugar. Add olive oil, lemon zest, yogurt, and lemonade and mix. Then, add the flour mixture and gently mix until all ingredients are combined.
  4. Pour the mixture into the greased pan and bake for about 30 minutes, or until a skewer comes out dry.
