homemade Lemon Cookies


 Hey fellow bakers! Today, I'm super excited to share a personal favorite of mine – homemade Lemon Cookies. Trust me, they're as delightful as a sunny day. So, let's roll up our sleeves and start squeezing some lemons!

Ingredients:

  • 1 cup white sugar
  • ½ cup butter (make sure it's nice and soft)
  • A good heap of fresh lemon zest (the secret to that zing!)
  • 2 large eggs (the fresher, the better)
  • A splash of fresh lemon juice (because, lemons!)
  • Just a hint of vanilla extract (½ teaspoon should do)
  • 1 ¾ cups all-purpose flour (the foundation of our cookies)
  • 1 ½ teaspoons baking powder (for that perfect rise)
  • A pinch of salt (¼ teaspoon, just to balance the flavors)
  • And lastly, some confectioners' sugar for that beautiful snowy coating

Now, the fun part – making the cookies!

  3. Shaping Up: Preheat your oven to 350°F (175°C). Now, shape the dough into little balls and roll them in confectioners' sugar. Place them on your baking sheet, leaving some room for spreading.
