Let's get creative in the kitchen with this deliciously unique Carrot Cake recipe that's sure to surprise your guests!


Ingredients:

  • 3 large eggs
  • 1 1/2 cups or 360g dark brown sugar
  • 1 packet of vanilla sugar
  • 1 cup or 240ml canola oil
  • 4 large carrots (about 300g), grated
  • 1 1/2 cups or 150g shredded coconut
  • 2 cups or 280g all-purpose flour
  • 2 teaspoons baking soda
  • 2 heaping teaspoons ground cinnamon
  • A pinch of fine salt
  • 1 cup walnut pieces
  • 1 cup golden raisins

Instructions:

  1. Preheat your oven to 160°C (320°F).
  2. Grate the carrots using a box grater. Roughly break the walnuts into pieces.
  3. In a large bowl, beat the eggs.
  4. Add both types of sugar and the oil, mixing well. Then, add the grated carrots and coconut, and stir.
  5. Sift together the flour, baking soda, salt, and cinnamon, and add to the wet mixture. Beat until just combined. Fold in the walnuts and raisins.
  6. Baking: Pour the batter into cake pans and bake for about an hour, or until a skewer inserted comes out almost completely dry.

This cake, with its soft and moist texture, flavored with cinnamon and enriched with nuts and raisins, is a wonderful treat. Serve it up and watch as your guests try to guess the secret ingredient – they'll never know it's carrot unless you tell them! Happy baking! 🥕🍰
